Scrambled Eggs and Baked Portobello Mushroom with Melted Goat’s Cheese

Scrambling eggs takes only minutes – but, remember, to make them oh-so-creamy cook over a low, low heat and stir constantly. By adding different herb combinations, you can make this dish your own.

serves 1

1 large portobello mushroom

1 tbsp olive oil

Pinch of Himalayan pink salt

20g (3/4oz) firm goat’s cheese, sliced

2 eggs

1 egg yolk

2 tbsp finely chopped dill, plus extra for garnishing (optional)

Preheat the oven to 170°C/340°F/gas mark 3 1/2.

Place the mushroom on a baking tray (cookie sheet), drizzle with the olive oil and sprinkle with a pinch of salt. Bake for 15 minutes, then arrange the goat’s cheese slices on top and return to the oven for 3 minutes to melt the cheese.

Beat the whole eggs and egg yolk in a bowl and add the dill, then pour them into a hot pan and cook over a low heat, stirring constantly, to the consistency you require.

Serve immediately with the mushroom and goat’s cheese, with a little extra chopped dill if you like.
